Delicious Dinners


I must say I do spend a lot of time in the kitchen. I use this time as 'teaching' time with my toddler. I talk to her about what I am doing & if she is looses interest I will pull her 'Little Tykes' table as close to where I am working as possible. I let her get her kitchen 'together' with her measuring cups, bowls & wooden spoons, then I give her flour & water & let her 'go for it'. Making her own creation.









I also make whatever I can ahead of time & freeze everything. Or I save my cooking/baking for 'nap time'


Easy Pizza Dough

-Pizza Dough Seasoning(multi-purpose) & Optional
8 TBSP  Cheddar cheese powder (you can use either white/yellow)
1 TBSP  Garlic powder
1 TBSP  Onion powder
1 heaping Tablespoon of Italian seasoning

Ingredients: Yields: FOUR -12-inch pizzas


4 1/2 C    Flour  -Plus more for kneading
3     pkg  Fleischman’s yeast for pizza dough
4     tsp   Sugar
2     tsp   Salt
2     C      Very warm water
1/2  C      Extra virgin olive oil


Directions:
-In a large bowl combine 3 cups of the flour with the yeast, sugar, and salt; stir together. 

-Add water and olive oil and stir together using a large metal spoon. Add the remaining 1 1/2 cups of flour a little at a time, using a spoon to combine until you finally use your hands to mix the last bit of flour in. Start kneading the dough, adding a sprinkle of flour on it every time it feels sticky, and continue to knead for 5 minutes.
*Optional* Begin adding in the pizza seasoning 1 TBSP at a time, adding according to taste.

- When you have a smooth ball of dough, turn onto a floured board and use a pastry cutter to divide it into 4 balls. Dough may be used right away or saved for later.


*This is an AWESOME & super easy recipe. Just yesterday I doubled this recipe & made 8 pizza dough's. We ate 1 that night & I froze the other 7.
I spray plastic wrap with an oil spray LOOSELY wrap them & put 4 into a gallon bag OPEN until frozen THEN I close the gallon bag. The day before we want to have pizza, I just take 1 dough-roll out & put it in the fridge on a plate overnight.

** I try to add a little wheat flour into whatever I am baking, so I use 3 cups of my white flour & 1 cup of wheat flour & then add 1/2 cup of bread flour.



**UPDATE (5/16/2013)
For Mother's Day my hubby wanted to cook us dinner. Pizza is really our favorite thing to eat (that is why I have to make so many pizza dough balls). Well, hubby had a great idea to try & make a Chicago Style Deep Dish Pizza. He wanted to make it in our cast iron skillet in the oven. He greased the pan then added the dough, slices of mozzarella cheese, green peppers, mushrooms then topped it off with sauce. It was AWESOME. I would definitely recommend this.



**UPDATE (6/1/2013)
For the Memorial Day weekend we decided to try something new, again. The weather is getting warmer we are trying to use our oven less to decrease our power bill & to keep our apartment cooler. Anyway, I knew cast iron pans can be put on a campfire... soooo... BAM..lets cook our pizza on the grill!! It was AWESOME. I pre-made the pizza & covered with aluminum foil & cooked it on a gas grill. We left it on the grill for 20-25 minutes, until the center it bubbling. Having done this a few times now I would recommend to make the dough even  & not try to make a 'crust' (which would make it very thin/flimsy in the center). Also cut up squash, zucchini & put it into an aluminum foil 'bag' & had grilled/steamed veggies with the pizza.
